Simple Turkish Rice Pilaf with Butter-Pilav

Updated: Dec 6, 2020

The most simple recipes are the hardest ones. And this is one of them. You just need to practice gestures couple of times until you get it right.

Like everybody in the world there are couple and popular techniques to eat rice in Turkey. Rice is usually side dish eaten with meat dishes. I will start with the most basic version. This simple dish is made with butter, quick but results are amazing. You can eat it with Turkish meatballs.

See the recipe below and add comment if you have questions

Ingredients

2 cups rice

3 cups warm water (to cook)

extra warm water to soak the rice

2 tbsp ghee or butter

2 tbsp olive oil

1 tsp salt

1-2 drops lemon juice (optional)

How to Make the Recipe

Soak rice with warm water for at least 20 minutes up to 2 hours in warm water. If you soak rice 2 hours in warm water, you might need less water to cook, it also depends on the rice you use. Please practice

After you are done with soaking your rice, wash it again.

Heat the pot and add butter/ghee and olive oil. Then add rice and salt. Mix it well and saute rice couple minutes. Add warm water and just mix it very gently to spread the rice in the water. We don't want to mix the rice again. At this point we can add couple drops lemon juice to keep rice white cause butter will turn rice color to yellow. Bring the water to the boiling point and then decrease the heat to low and simmer the rice about 15 minutes until rice is cooked through. Open the pot and move rice gently with wood spoon and add kitchen towel on top, and put lid back on. Wait 10 minutes before serving.

Serve it as side dish with kofta or salad
