Shepherd's Salad Recipe (ÇOBAN SALATASI)

A very popular salad that is served at homes and in restaurants in Turkey especially in summer when good summer tomatoes are in season.


This looks very basic but when tomatoes, cucumbers, peppers and onion comes together with good extra virgin olive oil, lemon and salt an amazing taste is felt. Very fresh and lively. If you add feta cheese and olives, then you create classical Greek salad. In Greek salad you cut ingredients roughly but here we dice ingredients fine to create a better mix. How big we cut ingredients in a salad affects overall taste big times.


This is my favorite lunch in summer and I usually eat it with bread, feta cheese and olives. If the weather is little bit cooler I would eat roasted tomato soup, it complements the taste perfectly.




INGREDIENTS

2 cups tomatoes, diced

1 cup cucumber, diced

2 green sweet banana peppers, diced

1 medium red onion, diced

parsley, handful, chopped


For dressing:

2 tbsp extra virgin olive oil

2 tbsp lemon juice

salt


How To Make Shepherd's Salad

Dice all ingredients and combine/mix them in salad bowl. You can either mix

salad ingredients and add it to the salad mix. I usually add olive oil first, mix it well. Then I add salt and mix and then add lemon at last and taste it and adjust dressing accordingly.
